Quick and Easy Prawn and Greens Stir-fry

  1. 3 large courgettes (spiralised)
  2. 2 tablespoons low-calorie oil
  3. I tablespoon green curry paste
  4. 200g green beans
  5. 1 bunch spring onions
  6. 250g prawns
  7. 90g halved cherry tomatoes
  8. I tablespoon Thai fish sauce


  1. Heat oil and add the green curry paste, courgettes, beans, spring onions, and prawns.
  2. Fry for 3 minutes, until the prawns are cooked.
  3. Add the cherry tomatoes and fish sauce and toss together.
  4. Cook for a further minute.
  5. Sprinkle with coriander and serve.
